Áts – Tokaj

Legendary Tokaj producer Áts Károly was the cellar master and then chief winemaker at the Royal Tokaj Company from 1994 until 2012 when he left to start his own cellar.

His Cuvée Late Harvest is a blend of Furmint, Hárslevelü and Moscato aged for 2 months in 500 litre oak. The Tokaj Aszú is produced from a strict selection of heavily botrytised hand-harvested grapes yielding only 200kg of fruit. After macerating for 16 hours with fermenting Furmint the must is fermented in barrel prior to racking and aging in new 500 litre Hungarian oak. With residual sugar of 192 g/l this is well above the new limit for wines that fall into the 6 puttonyos category (150g/l). As of the 2013 vintage the Puttonyos system has been effectively ended (although it may still be used with the producers discretion). 800 bts micro cuvée. The Dry Furmint comes from Szent Tamas and Betsek vineyards, both in Mad subregion. The wine was partly fermented and aged in 500l Hungarian oak, the rest in stainless steel tanks. Very clean and fresh with white pear flavours.
