Created in 2012, a Priest, a restauranteur and a rancher (not a joke) wanted unique wines that represented the altitude of their vineyards and to obtain the maximum potential of the varieties with which they work: Hondarribi Zuri and Hondarribi Zuri Zerratia 95% and 5% Riesling. With reduced yields per hectare, half that allowed for the DO, minimal intervention, and fermentation with indigenous yeasts.

Mahogany color. Powerful nose with aromas of caramel, dry orange peel, heather, with a background of quince and ripe pear. On the palate it is dry, giving way to a pleasant tannin reminiscent of red wines, with great volume filling the mouth with notes of toffee, almonds and ripe fruits, long and with a dry finish.
A product of the 2018 vintage which was marked by the frosts at the end of April, leaving the vineyards with 20% of normal production, biut grapes that were harvested were in amazing, concentrated condition. Skin contact, whole grape ferment in open chestnut barrels. Post alcoholic ferment and a gentle pressing the wine aged for 20 months in firstly chestnut barrels and later in Hungarian oak barrels
