Born in 1973 in Florence, Italy, Bibi Graetz's winemaking journey was profoundly influenced by his family's artistic background. Although initially educated in art and sculpting, he eventually redirected his passion towards winemaking, considering it an art form in its own right.
The winery named Azienda Agricola Testamatta (aptly translating to "Crazy Head Farm” was established in 2000 atop the hill of Fiesole, overlooking Florence. Enchanted by ancient vineyards and their ability to produce fruits of finesse, elegance, and purity, the estate has curated one of Tuscany's largest collections of these precious historic vineyards – some over 200 years old.
A deep devotion to native Tuscan grape varieties – Sangiovese, Canaiolo, and Colorino – forms the essence of his wines. The production philosophy is characterized by old vines, high altitudes, rocky and impoverished soils, and a commitment to biodynamic viticulture, all aimed at expressing the unique terroir of each individual vineyard and respecting the natural balance of the land. Within the winery, spontaneous fermentations, open-top barriques, manual punch-downs, and aged wine barrels transform grapes into vibrant, transparent, and elegant wines.
The white wines hail from the Isola del Giglio, drawing upon the wisdom and traditions passed down by ancient farmers. The island's exceptional and extreme terroir, located just fifty meters from the water, is shaped by the relentless forces of wind, sun, and salt that break down granite rocks to create sandy soils, hospitable to Ansonica, the native grape variety, for millennia. These time-honored vineyards infuse the wines with finesse and remarkable minerality.
