Once Eduardo Pérez de Azpillaga Urarte had completed his studies in Viticulture and Oenology, he returned to the family winery, with the condition that they would start cultivating their land in a manner more respectful to the environment. Accepting Eduardo’s proposal, the family began working to eliminate all synthetic chemical treatments from their vineyards, achieving ecological certification in 2001. They noticed that as chemicals were
removed from the vineyards, greater quality was obtained in the grapes, so began making a second wine, Señorío de Aztule, and later a third, Fincas de Aztule.

Later, Eduardo’s brother, Ignacio Pérez de Azpillaga Urarte, joined the family winery, and these two brothers continue to cultivate their 12 hectares of vineyard and manage the winery. Eduardo is a keen exponent of regenerative agriculture, a way of understanding our relationship with nature, which has many benefits. He aims to be self sufficient in the production of grapes, working with decoctions and plant extracts as treatments in the vineyard, thereby looking after the long term health of the environment by maintaining natural balance and sustainability. Eduardo’s approach reduces costs, while creating local employment and wealth.
