An amazing find from Jerez, a Bodegas founded in 1972 by, namesake, Dr Faustino Gonzalez who started out by purchasing Soleras dating back from as far at 1789. Still in family hands the Bodegas is still located in the cellars of Doña Carmen García-Mier in the Square of Cruz Vieja in the centre of Jerez. Nearly 45 years on from the founding of the Bodegas the Soleras are maintained with wine from 7 hectares of vineyard in Jerez Superior on fine albariza soils. A tremendously traditional Bodegas, fermentation of the wines is still carried out in American oak before being placed into the Soleras.

For their Amontillado, it receives 5 years in the Fino Solera before the Flor dies and then an addition 7 years aging in oxidatively in the Amontillado Solera. Bottled En Rama (Raw, with no filtering) this is a full but incredibly elegant Amontillado that is all about balance. Expect flavours of fig, toasted sugar, vanilla and tobacco. A beautiful wine and there isn’t much of it around!
