Primordial Soup White Blend 2019

13% abv

Vol- 75cl

Primordial Soup White Blend is derived from the Western Cape’s classical cultivars, blended to represent nature’s selection and packed with juicy life. An artful mix of classic South African varieties chosen and blended together.
A twinkling in the mind’s eye, this cultured concoction of the Western Cape’s brightest cultivars is alive with firm, fleshy fruit. On the nose, it has notes of jasmine and white stone fruit. It has a nuanced citrussy palate and tangy finish. It’s the Natural Selection.

The grapes used for this wine are 100% old bush vines from Swartland’s sandy, granitic soils, the powerful Southern sunshine makes sure the grapes reach their optimum ripeness. No irrigation is used in the vineyards and very little crop control is needed due to the age of the vines naturally restricting yield. All grapes are harvested by hand. Produced from only free run juice, part of the blend is naturally fermented and a tiny percentage in old barrels. The wine is left on fine lees for an extended period for greater palate weight and mouthfeel.

Good stock

The theory that all life on earth came from the swamp is a compelling one. In the 19th Century, in a scrawlier hand in a well read calf-skin notebook explains Creation, those huge perfections, a child’s warren of new ideas calling all creeds flawed. A linear paradox ensues called Evolutionary Theory that proves irrefutably the common ancestry of all living things from Nature’s Original Primordial Soup. This wine pays homage to the primordial soup theory and brings together in two ‘soups’ (a red and a white) some truly outstanding grapes from the winelands of the Western Cape. Each vintage varies depending on which cultivars ae at the top of their game, but the quality never wavers. It’s a natural selection of sorts, and at this price - evolutionary.
