Castello di Tassarolo is situated in the Gavi DOCG commune that shares its name. Massimiliana is the latest in the Spinola family line that stretches back to the 8th Century and who have owned the castle since the 14th Century. Massimiliana and Henry manage their 20 hectares of vineyard along Biodynamic principles and champion the use of heavy horses (one of which is called ‘Nicotine’) to further influence their soils’ health. The wines are organic and handmade and exemplify perfectly the high standards and respectfully natural production of the estate. The whites are all single commune Gavi DOCS and, highlighting the historical importance of the estate, the Commune is named Tassarolo after their estate.

The Gavi ‘No Sulphites’ partners the traditional, respectful production of healthy grapes using biodynamic principles with modern technology such as cold stabilisation and stainless steel, resulting in the production of wine without the addition of sulphur in any form. Rounded and pure fresh fruit flavours with an intense aroma of white flowers, crushed orchard fruits and meadow sweetness.Without the addition of sulphur at any point during the winemaking and bottling process this has a flavour profile set to one side from less natural winemaking.
