Castello di Tassarolo is situated in the Gavi DOCG commune that shares its name. Massimiliana is the latest in the Spinola family line that stretches back to the 8th Century and who have owned the castle since the 14th Century. Massimiliana and Henry manage their 20 hectares of vineyard along Biodynamic principles and champion the use of heavy horses (one of which is called ‘Nicotine’) to further influence their soils’ health. The wines are organic and handmade and exemplify perfectly the high standards and respectfully natural production of the estate. The whites are all single commune Gavi DOCS and, highlighting the historical importance of the estate, the Commune is named Tassarolo after their estate.
Castello di Tassarolo Gavi ‘Ombra’ 2021
Green tinges accompanied by an intense straw-yellow. crystalline and pure like sunrise through mist, belying its extended skin contact. No oxidative overtones, rather delicious fruit tension and powder-acids.
The grapes come from a very old vineyard of less than a hectare at top of a hill. After the harvest in small crates, the must is poured into spherical handmade amphorae together with the whole semi-crushed grapes. In these beautiful spacious jars, the fermentation develops in a circular and uniform movement. Once fermentation is finished, the grapes lie on the bottom for around 5 months and almost a year passes before the wine is bottled. The terracotta allows the wine a special oxygenation and the timee on skins adds protection and a subtle, lenghty texure. This natural wine has very low sulphites, with only one small addition before bottling. Unfined and unfiltered
