Cavit is a leading co-operative in the mountainous Trentino region of northeast Italy. The winery began as a consortium of associated grape growers in 1950, with a dedicated winery at Ravina di Trento built in 1964. Today It unites 11 separate cellars and their combined 4,500 grape growers across 7,000 hectares of vineyard, to produce an impressively broad portfolio from an intriguing palette of indigenous and international grape varieties.
Cavit Altemasi Graal Riserva Spumante Brut NV
Produced from vineyards in the highest hilly areas most suited to sparkling wine production in Trentino (Cembra Valley and a number of vineyards in the parishes of Roveré della Luna, Lavis and Trento). Collected in small cases, vinified using the method for white wine and left to develop in stainless steel for six months before undergoing second fermentation in the bottle. Disgorged no fewer than 36 months from “tirage” (second fermentation). Wonderfully developed, nutty, leesy character on the nose with hints of caramel. The palate is rich, with buttery flavours, hints of croissant and a great texture, making for a very approachable sparkler. Drink as an aperitif, or with smoked salmon and rabbit terrine.
