Château l'Ermitage was founded in the 11th Century by the hermits of Sainte Cécile d'Estagel Abbay. It is situated on the pilgrimage route of Santiago de Compostella. The estate's total surface covers 80 hectares of sunny south facing vineyards, which benefit from the airy Mediterranean climate. We have a close relationship with owner Jérôme Castillon and he has been instrumental in some of our own wines; Savoir-Faire Mourvèdre is produced from his fruit, but produced by our winemakers in his cellar. Jérôme restricts the use of oak influence as much as possible and new oak is not used.

Grapes are picked from 15 year old vines which yield 40 hl/ha. The vineyard is made up of rolled Durance pebbles – the Durance river flowed through the valley well before the Rhône. Manual harvest when the grapes are super-ripe to obtain the concentration of a “vendanges tardives”. The pressing and the racking of the must are done at low temperatures. The fermentation is carried out at controlled temperatures and halted at 80 grams of residual sugar by the addition of fortifying spirit.
Elegant sweet wine with an excellent balance of sweetness and freshening acidity. Aromas of ripe peach with some hints of lemon verbena, peppermint and lavender honey. It is deliciously grapey and luscious with good length and grapefruity finish.
