Laurent Lebrun was trained as a winemaker at Montpellier, spent his formative years training in Australia and then returned to France to take up the position of General Manager and Head Winemaker at Château Olivier, Grand Cru Classé in Bordeaux. He has recently taken over the running of his family estate in Pouilly-Fumé which makes classic, flinty wines from 9 hectares of vines on the slopes of St. Andelain.

Typical expression of Pouilly Fume, lots of citrus fruit underpinned by smoky undertones when drunk in youth. With age come complexity, worth cellaring.
With an average age of 25 years, the Sauvignon Blanc vines are planted at a density of 7000-8300 per hectare. The grapes are gently pressed before the juice is fermented in tank at low temperatures, usually 16-18 degrees. Maturation is carried out on fine lees in both stainless steel tanks and large oak vessels for a period of 5 months.
