Fattoria le Pupille SolAlto 37.5cl 2008

Elisabetta’s dream to create a great noble rot (Botrytis) wine in Maremma became true with the birth of this sweet wine, obtained from the late harvesting of grapes from vineyards of Traminer, Sauvignon and Semillon in Scansano. This sweet wine is the meditative version of Elisabetta Geppetti’s vivacity and energy.
The intense straw yellow colour, with golden reflections, heats up the soul straight away. The scent is full of candied fruits aromas, with perfumes of peach, apricot and pineapple, evolving in even warmer scents of resin.

The softness is well supported by the acidity, which renders the wine elegant and balanced. The long persistence allows to perceive the fragrance of mature figs and dates.

From two vine parcels dating 1990& 2001 hand harvested when the grapes reach a concentration of sugars superior to 35% and a diffused presence of Botrytis, the noble rot. After pressing & vinification at a controlled temperature of 15ºC, until an alcohol level of 13.5º is reached, the fermentation is interrupted freezing the product
at -5ºC, completing the production cycle with tartaric stabilization, clarification and filtration. The wine is placed on the market after being stabilized and aged in bottles
for 24 months
