a few minutes later in the cool on-site winery, still fresh with no need for
sulphur. The grapes are gently processed in an old bag press and finished in
stainless-steel tanks used as fermenters and for blending. Temperature controlled ageing in the finest French oak barrels Bottling, labelling and packaging is all done at the winery to ensure the quality is never compromise

The complex wine lingers in the mouth with great vigour and persistence from start to finish. Food Pairing: Suited to grilled fish, baked chicken or goats cheese.
Extended cold maceration extracts the wonderful flavours from the skins. Gently pressed, the must was transferred into 500litre French oak puncheons (30% new)
Natural wild yeast fermentation was followed by a natural secondary (malolactic) fermentation.
The young wine was left on its pure lees, stirred regularly for exquisite silkiness, complexity and depth.
15 months of maturation in the barrel, no cold stabilization or fining and only light filtration retains the beautiful aromas.
Natural sediments may show but do not impact on the high quality of this natural wine.
