Jean Collet et Fils Chablis 1er Cru Vaillons (GTO) 2020

12.5% abv

Vol- 75cl

9 ha of 45 year old vines (on average). 5 different climats, all vinified separately. Vinified in equal parts of Foudres, stainless steel cuve and barrel.

“From a 9.5-hectare, organically farmed parcel, the 2020 Chablis 1er Cru Vaillons is another of Collet’s larger cuvées. Exhibiting aromas of orange oil, freshly baked bread, beeswax and dried white flowers, it’s a medium to full-bodied, satiny and precise white that’s matured almost entirely in foudre.”

The Collet family own 40 hectares of exceptional Chablis vineyards which they farm mainly organically, and the rest is in organic conversion. Romain Collet represents the new generation in charge of the Domaine. He took the reins in 2009, pioneering fermentations with ambient yeasts in 2010. Organic farming is increasingly being rolled out, and which wines are certified is indicated in our database. Collet harvests relatively ripe grapes and conducts fermentation and élevage in a variety of vessels, including stainless steel, concrete eggs and oak in formats ranging between old foudres and new barrels—the latter exclusively from Tonnellerie Cavin (run by a school friend).

"Since my last visit before COVID-19, the wines seem to me to have taken another step up in quality; better integrated wood influence and even more vibrant flavors, despite seemingly ever-warmer vintages, mark this out as an estate to follow closely." William Kelley, The Wine Advocate, July 2022
