Anthony Wills built Kilchoman distillery in 2005 and in doing so brought farm distilling back to Islay. In May 2019, Kilchoman doubled production with the construction of a new stillhouse adding two more stills, along with a new mash tun and six new washbacks. That has taken production capacity close to half a million litres of alcohol a year, and will enable experimental runs using different yeast and barley varieties.

Casado (Portuguese for marriage) is a limited-edition bottling which was matured in fresh bourbon barrels for 6 years before 38 casks were selected and married together for 2 years in two 6,000 litres Portuguese red wine vats.
“The red wine marriage gives the whisky layers of red fruit and spices which complement the vanilla and butterscotch influence of the bourbon barrels beautifully”.
Nose: Bonfire smoke, dried apricot, salinity, marzipan and toffe apples.
Taste: Black pepper, smoke fish, lemon peel, tannic wood and stone fruits.
Finish: Aromatic spices and red berry.
