Michel Hubert Calvados Pays d’Auge 2002

Nestling deep in the lush fertile county of the Pay d’Auge les Vergers de la Moriniere is the idyllic location from which Michel Hubert produces some of the very best farm-produced calvados. Michel Hubert controls every aspect of the production of his calvados and this knowledge and expertise passed down through five generations has culminated in a product admired for its quality. Michel says that a few pears from the 200 year old tree next to the cellar in his cider helps ensure its quality. An appley backdrop (no surprise there) with sweet cinnamon and clove spice and nuances of butterscotch. He uses 15 varieties of apples, together with 5% of pears, and never sprays his crop. The cider is left in ‘foudres’ for one year before distillation, the Calvados then being matured in long old oak barrels. He only makes single vintage Calvados which is of sublime quality.
