Craft Wine Co. is based in the Willamette Valley in Oregon, the Origin and Minimus label doing exactly, well... what they say on the label. Minimus wines, simply put are produced without additives, and Origin wines are varietals from select vineyards that produce profound expressions of those varietals. Strident believers in organic farming, they make their wines naturally, patiently, and with a seemingly endless supply of enological curiosity. Reserving the right to experiment with just about any sort of technique they like, brettanomyces laced whites, intentional reduction, long skin contact, carbonic maceration and just about anything else one can imagine is the order of the day here

Intense forward notes of sour cherry and tart red berries followed by savoury characters of braised meat and black pepper. Highlights of fresh cut stone and chalk finishing with long mouth-affirming acidity.
The tiny berries from this site offer an ideal skin to pulp ratio, and thus produce a concentrated and vibrantly coloured Oregon Gamay. Fermentation takes place in large concrete tanks, with about 10% whole cluster, and aging occurs in neutral French oak to preserve delicate aromatics and pure fruit character.

Minimus was started in 2011 in Oregon by Craft Wine Co winemaker, Chad Stock, as a series of one-off experiments, and continues to be home of innovation, experimentation and research. Minimus pushes the boundaries of winemaking and viticulture by continuously exploring the possibilities in this diverse region. They use a variety of fermentation vessels, and work with as many cultivars and clones as they can, often producing experiments that will never be repeated.
