Established in 1952, Champagne Serveaux is located in the Marne river valley and this family vineyard is now run by three siblings Hugo, Elodie and Nicolas who are the 3rd generation of winemakers and firmly fixed on moving their Domaine forward. Specialising in Pinot Meunier which thrives in the majority limestone and clay soils. Lees ageing is for a minimum of 36 months with lower than usual dosages which allow the fruit quality to shine through.The family has high standards of sustainability with HVE3 certification and work organically where possible.

Serveaux Fils Pur Meunier

Visually an attractive, slightly pink colour with pale gold highlights. The nose is aromatic with scented peony and red berries, followed by more red fruit, and delicate brioche on the palate with the mineral quality and touch of salinity that is typical of Pinot Meunier from Passy-sur-Marne. A signature of the domaine, this 100% Pinot Meunier cuvée is made with reserve wines taken from 2016 (70%) and 2015 (30%). Traditionally vinified in stainless steel tanks, with no malolactic fermentation allowed to take place which helps the wine to maintain a bright, fresh, mineral character. It is then bottled and left on the lees for about 36 months – far longer than appellation rules dicate for anon-vintage champagne. Dosage is low at 6g per litre.
