After establishing in Dornoch what may be the best whisky bar in Europe (if not the world), Phil and Simon Thompson decided to take their passion for whisky to the next level by building a distillery on the grounds of Dornoch Castle Hotel. Off the back of a successful crowdfunding campaign, Dornoch's first whisky distillery was formed. Based out of an old fire station, Dornoch Distillery is quickly becoming one of Scotland's most exciting distilleries. Inspired by whiskies of a bygone age, where flavour creation meant more than commercial yield, the brothers are experimenting with very long fermentation times (7-10 days) and all cuts from the still are made by nose (and sometimes mouth) rather than thermometers, hydrometers and automated machinery. We've got a couple of years until their spirit is ready to be called whisky so in the meantime the brothers are distilling and selling an incredible Organic Highland Gin and bringing some exceptional single cask whisky from other distilleries to the market as independent bottlers.

The aromatic smokiness of Croftengea, Loch Lomond distillery’s peated single malt, is beautifully expressed here in this independent bottling by Thompson Bros.
Peated spirit from Loch Lomond distillery was filled into two ‘De-charred, Re-charred’ hogsheads on the 8th of April 2006. The whisky was bottled at 16 years old in November 2022. An outturn of 479 bottles filled at 50% vol.
Nose: Quite autumnal, lemon rinds, bonfire, dunnage warehouse, cinnamon, mint leaves, liquorice.
Palate: Heavily charred pineapple chunks, leafy, smoke, damp forest floor, fresh tobacco, lemon curd.
Finish: Long, sweet and smoky with vegetal notes.
