After establishing in Dornoch what may be the best whisky bar in Europe (if not the world), Phil and Simon Thompson decided to take their passion for whisky to the next level by building a distillery on the grounds of Dornoch Castle Hotel. Off the back of a successful crowdfunding campaign, Dornoch's first whisky distillery was formed. Based out of an old fire station, Dornoch Distillery is quickly becoming one of Scotland's most exciting distilleries. Inspired by whiskies of a bygone age, where flavour creation meant more than commercial yield, the brothers are experimenting with very long fermentation times (7-10 days) and all cuts from the still are made by nose (and sometimes mouth) rather than thermometers, hydrometers and automated machinery. We've got a couple of years until their spirit is ready to be called whisky so in the meantime the brothers are distilling and selling an incredible Organic Highland Gin and bringing some exceptional single cask whisky from other distilleries to the market as independent bottlers.

Exclusively bottled for the Inverness Scottish National Whisky Festival 2025, this special release is the result of a careful cask selection by our team in collaboration with the wonderful folks at Dornoch Distillery.
We chose this Inchmurrin 11 Year Old – finished in a Sauternes cask for 2 Years – not only for its exceptional character, but also for its subtle nod to the world of wine, making it a fitting and thoughtful expression for this exclusive festival bottling.
As always, it’s a real pleasure to work alongside Dornoch, and we’re proud to offer a dram that’s as enjoyable to savour alone as it is to share with friends. Slàinte!
Nose:
Bright and aromatic with layers of honeyed apricot, ripe peach, and golden sultanas. Underneath the fruit, subtle notes of toasted almonds, white chocolate, and floral oak mingle with a gentle waxiness.
Palate:
Silky and rounded, with a rich wave of sweet dessert wine character – candied orange peel, lemon curd, and vanilla cream. The Sauternes influence brings in hints of botrytis spice and syrup-soaked sponge cake, balanced by fresh green orchard fruits and a touch of zesty citrus.
Finish:
Long and elegant with lingering sweet spice, a light herbal edge, and traces of oak tannin that bring welcome structure. A touch of white pepper and honeycomb rounds it out.
