Manual harvest, sorting on vine then in the vat and finally pressing (pneumatic) to obtain a slow extraction.
Barreling after a slight settling. The grapes are put in French oak barrels of 5OO liters (15 % of new barrels) in which the alcoholic and malolactic fermentations in yeasts and native bacteria take place. Fine lees for 15 months without stirring. One month before bottling, the wine from different barrels is placed in a stainless steel tank for blending. Then follows a light bonding and light filtration before bottling. Bottling is done according to the lunar calendar.

A nose of hawthorn, with a lemon shade and the pomme de reinette. The magnitude and grease are perceived, spontaneous vivacity and enough acidity to age well. A wine generally fond, sweet, but not heavy.

In May 2012, Vincent Girardin sold his business to Jean-Pierre Nié, the owner of Compagnie des Vins d’Autrefois in Beaune. Jean-Pierre, very sensibly, took the decision not only to retain Eric Germain (head winemaker) and Marco Caschera (sales and exports) but to make them substantial shareholders in the business.

As far as we are concerned, nothing has changed. They continue to work with the highest quality raw materials and Eric Germain continues to make the wines, as he has done for over fifteen years. Indeed, now that Eric is entirely free from other constraints, we have noticed the wines’ gain in precision over the last few vintages! There is no bâtonnage and extended maturation in barrel, giving the white wines greater tension, elegance, energy and purity. In Christophe Marrin, they now, also, have a specialist red winemaker who will work under Eric. We are already seeing finer, more elegant red wines as a result.

The Bourgogne Blanc “Terroir Noble” comes from vines all situated in the communes of Puligny, Chassagne and Meursault. The Bourgogne Rouge “Terroir Noble” is exclusively from old vines around Volnay and Pommard. Both are excellent.

This is a small to medium sized negociant business of the highest quality. They have contracts to buy fruit from 85 hectares (55 of which are controlled and harvested entirely by the Girardin team) and have 13 hectares in ownership or fermage. They will continue to make further investments in their own vines and have recently made acquisitions in Volnay, Puligny, Meursault, Pommard and Auxey-Duresses. They are far smaller than is often imagined – making between 28,000 and 50,000 dozen per year, depending on the vintage. Their wines remain absolutely delicious, accessible, examples which speak, clearly, of their individual terroirs

What do I pay for delivery?

Orders under £150 are charged an initial £9.95 incl. VAT.

Northern Ireland, Isle of Man, Isles of Scilly.
Orders under £190 are charged an initial £12.00 incl.

All stock bought from Bond will be charged at delivery cost as quoted by the bond. As this varies dependent on the location of the wines and ultimate destination this will be quoted to you at the point of billing for VAT and duty.

And can we change order.

Deliveries are normally between 09.00 and 17.00 Tuesday to Friday and a signature is required on receipt of delivery. (We do not ship on a Friday for Monday delivery unless specifically requested to do so).

A shipping confirmation email will be sent when your order has been processed and shipped. You will be sent a further email and/or text with a delivery time slot and a consignment number along with instructions on how to amend this if required.

If you are out a card is left, with an instruction to call the local depot to re-arrange delivery. Alternatively, you can inform us to “leave safe”, “leave with a neighbour”, “leave in garage” etc. and we will pass this information onto the courier. Please remember that, in accordance with our Terms & Conditions, alcohol will only be left with persons over 18 Years Old.

We use Mailsafe packaging and double walled cardboard boxes for secure shipping of all bottles. Clear labelling marked FRAGILE is applied and all our despatches.
