Bottled at cask strength from a single hogshead of 21 year old Highland Park and exceptionally special. Just 278 bottles from the cask
Nose: Black olive tapenade, Mash tun, madeira cake, black tea & citrus fruit.
Palate: Red fruit spice, gentle peat & warm tar. Buttered crumpets sprinkled with citrus peel
Finish: Long and sophisticated, tones of peat, rich oak, orange marmalade.

Just a few more phenols than is normally found for a Highland Park of this age and that extra smoke does no harm at all. It would be ridiculous and beyond a cliché to expect heather honey… but there she blows, that understated sweet note that just creeps in above the acidic, anthracite bite and below the soothing citrus which lighten the entire picture; spot on delivery. The spices arrive early, but not before the tannin has already begun knocking on the door. Dominant though, is the gently salted malt which cushions all impacts with a velvet glove. Long, lightly smoked and with the gentlest fade of walnut cake accompanying Jamaican Blue Mountain coffee with the most apologetic inclusion of milk and a little dark liquorice on the side. For me 21 years was always the optimum age for Highland Park… and always, without exception, in an ex-bourbon cask. Or, at least non-sherry. With a stunning bottle like this, surely some kind of award winner this year, it is hard to argue.
