Although wine was an important industry in the Yarra Valley throughout the 1800s, by the 1920s it had largely halted as farmers favoured the greater returns available from sheep farming. It took the vision of a now legendary plant physiologist and Roseworthy winemaking graduate, Dr Bailey Carrodus, to help re-establish the Yarra Valley as one of Australia’s pre-eminent wine regions. After several years of careful research, in 1969 he purchased land at the foot of the Warramate Hills, and in 1973 produced the first vintages of his now iconic Dry Red Wine No.1 and Dry Red Wine No.2. Dr Carrodus continued to make the wines until his death in 2008, when the winery was purchased by businessmen Ed Peter and Reid Bosward. Both long term fans of Yarra Yering, they continue to honour the founder’s quest for elegance and sophistication, ably supported by winemaker Sarah Crowe, who in 2017 was named Winemaker of the Year by James Halliday.

Yarra Yering Underhill Shiraz [En Primeur – Due January 2026] 2020

TASTING
A perfumed cool climate Shiraz; deliciously medium bodied with a lick of aniseed spice. Bright red and blue plum fruits bring a fresh energy to the palate and some char and spice layering in structure and complexity. As always from this block we see some cured meat and a smoke-char interest driving the back palate. Medium weighted fruit with oak just a faint seasoning.
VINEYARD
This wine is made from a single block of Shiraz planted in 1973: 8 acres at the western extremity of the Yarra Yering vineyard.
WINEMAKING
Hand-harvested, the bunches were passed across a sorting table before processing either as whole bunches or whole berries. 50% of the block was fermented and matured in a second use 3500-litre upright oak cask containing 20% whole bunches and topped up for maturation with 100% whole bunch component. The remainder of fermentation took place in the Yarra Yering half-tonne open-fermenters, gently hand plunged twice daily.
It was air bag pressed to release the last fermenting juice from the many whole berries remaining. The wine was then aged for 12 months; 50% in the 3500-litre one-year-old cask and 50% in French oak puncheons (500-litre) with 10% new oak.
