For 4 generations the Delavenne family has been producing distinctive Champagne cuvées from their 9 hectare estate of Grand Cru vineyards in the villages of Bouzy, Cramant and Ambonnay. Low sulphur, no fining, no herbicides or chemical fertilisers and all hand harvested grapes ensure every effort is made to retain the pure expression of the terroir. All fermentations take place in temperature controlled stainless steel tanks as it is felt that barrels would detract from the transparency of the terroir. None of the wines are put through malolactic fermentation, maintaining an exceptionally bright, fresh and clean, knife-edge acidity. All cuvées are aged a minimum of three years in bottle.

60% Pinot Noir, 40% Chardonnay from Bouzy. Spontaneous fermentation with native yeast in stainless steel tanks No malolactic fermentation, no cold flash stabilization, only patient careful winemaking to preserve all the aromas and flavors of the Bouzy terroir.
