This iconic French liqueur has been made by Carthusian monks since 1737; initially intending it to be used as medicine. The exact recipes for all forms of Chartreuse remain trade secrets and are known at any given time only to the three monks who prepare the herbal mixture. The only formally known element of the recipe is that it uses 130 different plants. In 2019 the monks decided to limit Chartreuse production to 1.6 million bottles per year, citing the environmental impacts of production, and the desire to focus on solitude and prayer. The combination of fixed production and increased demand has resulted in shortages of Chartreuse across the world

A major part of French walnut production comes from the Dauphiné region. As is the case in most regions where walnut trees grow, it is a family tradition to let green walnuts gathered on Midsummer’s Day macerate in wine (walnut wine) or spirits (walnut liqueur). The Carthusian monks extract the juice from the nut and distil the extraction, which gives that very special character to this liqueur.

recommended to drink this aperitif very cold or with ice to enjoy all the flavour. It can be used in cocktails and as a dessert wine, particularly with chocolate desserts.
