Marechal work in the communes of d’Auxey Duresses, Chorey les Beaune, Savigny les Beaune, Ladoix, Volnay and Pommard and cultivate the soil without chemical herbicides and only organic materials are added. Only organic treatments are used on the vines. The grapes are hand picked to avoid oxidation and achieve optimum maturity and hand sorted to eliminate bruised fruit. They are transported to the cuve by conveyor belt. Fermentation takes place using indigenous yeast and the lees are returned to the juice to obtain a result to our satisfaction. At the optimum moment the wine is transferred from tank to barrel (10 to 25% new) and after 10 to 15 months when the wine is ready it is bottled without filtration.
Domaine Catherine et Claude Marechal Savigny les Beaune Vielles Vignes 2021
13% abv
Vol- 75cl
A red wine with a very elegant and fairly powerful bouquet, supple and discreetly tannic on the palate. This light composition gives it a feminine image. The Premier Crus, more robust, lack neither character nor power and require more prolonged aging. The Savigny wines call for light cuisine, red or white meats, even game birds. Only the premier crus will tolerate a slightly strong sauce.
“Tank/cask sample. An attractive smoked note as well as dark fruits. Lots of energy on the palate and sweeter, riper fruit than may other wines. Nice weight. Appealing and with a good fleshy finish.” 16 Points, (AC), Jancis Robinson.com, Sept 2022
