A star grower and winemaker within the star Sancerre village of Chavignol, Francois Cotat is the scion - along with his cousin Pascal - of the family domaine originally run by brothers Paul & Francis. The cousins now work individually (Pascal is based in Sancerre) but their source material continues to be the old vines and parcels that each use to produce some of the most singular and profound Sauvignon Blanc anywhere. The grapes come from the most famed vineyard sites. Harvest is normally late (often the last in the village) to encourage full maturity and gives the basis of depth and complexity; only wild yeasts are used and juice is not settled before ferment so levels of solids are high. Fermentation is in old demi-muid and aging in used tonneaux with no fining or filtration. Old school mindset with no pesticides, scant additions and principles.

A fairly deep colour that reflects the ripeness of the fruit despite the north-facing site. The nose is savoury and spicy, with a very expressive, red berry fruit character reminiscent of summer pudding, along with a touch of watermelon. The palate is an explosion of red fruit, good grip and weight with a pithy character that marks this out as the ultimate food rosé. A striking contrast to the fashionable yet rather monotone Provence style rosés.
