The Collet family own 40 hectares of exceptional Chablis vineyards which they farm mainly organically, and the rest is in organic conversion. Romain Collet represents the new generation in charge of the Domaine. He took the reins in 2009, pioneering fermentations with ambient yeasts in 2010. Organic farming is increasingly being rolled out, and which wines are certified is indicated in our database. Collet harvests relatively ripe grapes and conducts fermentation and élevage in a variety of vessels, including stainless steel, concrete eggs and oak in formats ranging between old foudres and new barrels—the latter exclusively from Tonnellerie Cavin (run by a school friend).
