Klein Constantia Sauvignon Blanc Metis 2019
13.5% abv
Lively and bright in appearance. The nose bursts with aromas of blackcurrant leaf, wet slate and limes. Rich complex flavours of kiwi fruit and lemon zest follow on the palate. Textured with a coarse salinity on the mid palate. A pure expression of Sauvignon Blanc. Youthful and elegant, the wine concludes with a long zesty lingering finish.
Metis Sauvignon Blanc was inspired by Pascal Jolivet and his holistic approach to winemaking in Sancerre. Using a unique and minimalistic approach to winemaking to make a wine that shows the true expression of the Constantia terroir. The name Metis refers to the collaboration between the two producers to craft this great wine.
A pure Sauvignon Blanc that reflects a sense of place rather than technique. Grapes were harvested from 4.00am from a selection of 6 different high lying blocks able to withstand the way in which the wine is made. The blocks are a combination of biodynamic, organic and sustainably farmed vineyards. No sulphur was added at crush and fermentation was wild. The wine was left to mature on the lees for a period of 12 months in a combination of stainless steel tank as well as 20% neutral oak barrels.
