Domenico Ponzo – Sicily, Italy
Domenico Ponzo is an agricultural expert who does a small production of olive oil (around 2000 litres) from his family’s olive trees located in the commune of Salemi in the famous Valle del Belice (Western Sicily).
Farmed with full respect for nature, without the use of chemical products, the majority of the olive trees are more than 100 years old and are Cerasuola and Nocellara varieties. There are also some olives sourced from a new experimental plot planted with young Arbequina trees.
These oils are unfiltered so will throw a sediment from the olives themselves. Harmless, and good for the oil flavour and texture.
