For four generations the Delavenne family has been producing distinctive Champagne cuvées from their 9ha estate of Grand Cru vineyards in the villages of Bouzy, Cramant and Ambonnay. Low sulphur, no fining, no herbicides or chemical fertilisers and all hand-harvested grapes ensure every effort is made to retain the pure expression of the terroir. All fermentations take place in temperature controlled stainless steel tanks as it is felt that barrels would detract from the transparency of the terroir. None of the wines are put through malolactic fermentation, maintaining an exceptionally bright, fresh and clean, knife-edge acidity. All cuvées are aged a minimum of three years in bottle. Owner and winemaker Christophe is also a keen follower of Lithotherapy. This is a process where active and virtuous, stones and minerals are infused in pure water after a specific cleansing phase, using water and plants, to release their beneficial effects. Each stone is chosen for its inherent richness: amber, rock crystal, moss agate, tourmaline, and green calcite properties. The resulting 'gem water' is then sprayed as a treatment onto different vineyards that are atuned to the specific waters. Whether for support or prevention, it is believed that lithotherapy offers an open and natural path to more vibrant soils, healthier vines and brighter wines. An inspired and enlightening reconciliation of man and nature.
