Established at the crossroads of latitude 47 ° North and longitude 3 ° East, my estate cultivates eight confidential plots in the heart of Chablis Burgundy.I have been working alone these vines planted by my grandfather on the slopes of my village of Beines, my father followed up and I took over the family history. I am keen to work out each cuvée as a fair balance between the typicity of the soils, the character of the grape variety and my human intervention.
Domaine 47°N 3°E (Guillaume Michaut) Chablis 1er Cru Cotes de Savant 2021
13% abv
Vol- 75cl
After natural settling at low temperature for 36 hours, the clear juices are vinified in 500 liter Burgundy oak barrels in which natural, alcoholic and malolactic fermentations will take place. Aged for 12 months in these demi-muids, the wine is lightly filtered then bottled.
This wine is distinguished by its purity and rich aromatic character. A unique salinity gives it a beautiful freshness, while the notes of ripe fruit are expressed with elegance. Its ample, perfectly balanced aromatic composition gives it a unique personality.
