Just south of Aberlour and in the shadow of Ben Rinnes you will find GlenAllachie Distillery. GlenAllachie was built during the boom times of 1967/68 for the Scottish & Newcastle Breweries subsidiary Mackinlay-McPherson Ltd. The distillery was designed to be almost full gravity fed to run on reduced energy (crafty brewers). In February 1968, the distillery began its first production run with the capacity of producing almost three million litres of alcohol. Operations began with two stills and increased to four after just six months. Recently revitalised by Billy Walker (of GlenDronach, BenRiach and Glenglassaugh fame), GlenAllachie burst back onto the scene in 2018 with a 10, 12, 18 and 25 year old. It has since seen a 15 year old join the ranks along with some interesting adventures in cask finishing and some truly exceptional single casks.

Nose: Cinnamon spice, butterscotch and damson plum, with notes of heather honey, raisin butter and crystalised ginger.
Taste: : Toasted honeycomb, fresh brambles and baking spices, followed by maraschino cherries, mocha and plum jam, with treacle and chocolate.
Palo Cortado is the rarest style of Sherry that combines the dryness of Fino with the nutty and darker fruit characteristics of Oloroso. It develops when the ‘flor’ yeast layer naturally dies on a wine that was initially intended to become a Fino. Using puncheons and hogshead casks that previously held this exceptional Sherry, the spirit develops a beautifully layered character, with notes of ripe
plums, dark mocha and warming cinnamon spice.
