Inchcolm Distillery Pochle Geal 50cl

Pochle Geal (white) is the company’s first release. It is a zero-waste initiative in collaboration with the next generation of distilling talent at Heriot Watt University that makes use of the UK’s most wasted fruit. The surplus apples used to make the spirit all come from within a 30-mile radius of central Edinburgh.
The distillers reached out into the community and collected the apples from private trees, farms, walled gardens, community orchards and some commercial orchards. These are then taken to a warehouse where they are washed (literally in a bath) sorted and pressed using two hydro presses. The resultant juice then undergoes an extremely long (15-day) fermentation into a cider which is distilled into our spirit. All cut in and out points from the still are made by nose and taste rather than hydrometers or any automated machinery and the spirit has not been filtered or had anything added to it. It is made from apples, yeast, and water.

This ‘eau de vie’ is rested for 30 days before being bottled as a white spirit that has been painstakingly created to go very well with tonic and a slice of orange.

The next product will be a ‘rested’ version and is currently aging in 1st fill bourbon casks, bespoke Pedro Jimenez ¼ casks and a small virgin American oak firkin.

Nose:
Sweet green apple with a background of orange marmalade and subtle hints of cardamon.

Palate:
Light and nutty

Finish:
Floral and spicy.

The name comes from the old Scots word pochle, meaning to take a small amount of something that doesn’t necessarily belong to you.

Not only a great drink but good for the planet – now that’s refreshing.

A long time ago, two young bar men had a dream. Born out of a deep running passion for whisky, now backed up by a lifetime of selling it, we are fully committed to having our say in how the future of Scotch malt whisky is shaped, creating a genuine and authentic product that matches modern consumer values and lifestyles.

We are both local people, well-travelled and with our background in hospitality have an affinity for placemaking and realise the responsibility on our generation to help provide new solutions to tackle current social and environmental issues. Our national spirit is part of the fabric and narrative of Scotland and as such is a fantastic platform to demonstrate how this narrative continues.

In becoming part of the regeneration of Granton, we have an outstanding opportunity and organic environment to offer a modern interpretation of deep-rooted connections that distilleries form with their local communities and show the world what a modern Scotland and a modern Scotch whisky is all about.

What do I pay for delivery?

Orders under £150 are charged an initial £9.95 incl. VAT.

Northern Ireland, Isle of Man, Isles of Scilly.
Orders under £190 are charged an initial £12.00 incl.

All stock bought from Bond will be charged at delivery cost as quoted by the bond. As this varies dependent on the location of the wines and ultimate destination this will be quoted to you at the point of billing for VAT and duty.

And can we change order.

Deliveries are normally between 09.00 and 17.00 Tuesday to Friday and a signature is required on receipt of delivery. (We do not ship on a Friday for Monday delivery unless specifically requested to do so).

A shipping confirmation email will be sent when your order has been processed and shipped. You will be sent a further email and/or text with a delivery time slot and a consignment number along with instructions on how to amend this if required.

If you are out a card is left, with an instruction to call the local depot to re-arrange delivery. Alternatively, you can inform us to “leave safe”, “leave with a neighbour”, “leave in garage” etc. and we will pass this information onto the courier. Please remember that, in accordance with our Terms & Conditions, alcohol will only be left with persons over 18 Years Old.

We use Mailsafe packaging and double walled cardboard boxes for secure shipping of all bottles. Clear labelling marked FRAGILE is applied and all our despatches.

UK mainland deliveries are overnight from confirmation of despatch with the exception of the following postcodes where deliveries are made on a 2 to 5 day service from despatch : 

IV 3 to 11, IV14 to 28, IV 40 & IV 51 to 54, IV 63. KW 1 to 3 & KW 5 to 14. PH 33 to 41
