Holyrood is the first whisky distillery in the city of Edinburgh for almost 100 years, following the closure of Edinburgh (which was also known as Glen Sciennes or Newington) distillery in 1925. Holyrood was established within a 180-year-old-building that was formerly the goods shed for St Leonard’s railway station.

Holyrood’s aim with Ambir was to create a sticky and sweet single malt. They have achieved this by using a combination of speciality malts and different yeasts.
Matured in 90% first fill Bourbon casks and 10% Oloroso casks to create a harmonious balance of sweet malts, fruity yeasts, wrapped in a blanket of warming spicy vanilla from bourbon barrels.
Nose: Caramel, creamy fudge, demerara sugar, tablet
Palate: Red fruits, vanilla.
Finish: Biscuity, velvet texture, mouth-wateringly slightly astringent, hint of savoury on the end.
