Holyrood is the first whisky distillery in the city of Edinburgh for almost 100 years, following the closure of Edinburgh (which was also known as Glen Sciennes or Newington) distillery in 1925. Holyrood was established within a 180-year-old-building that was formerly the goods shed for St Leonard’s railway station.

Cacao, blackcurrant and honey notes. Sweet and rich with stewed red fruit and spicy green peppers. Hints of coffee, raisins and oak spice at the end.

“Think chocolate and hazelnuts from the malt, with the yeast specially selected to boost the chocolate notes giving it a richer
flavour. The chocolatey spirit is then matured in Oloroso casks dialling up nutty notes. It’s like being chased by a fruit and nut bar determined to give you a giant hug.”Calum Rae
Holyrood distillery push the boundaries of traditional whisky making. While others tend to use more traditional yeasts and malts, they like to do something a little bit different. For Pitch, they have paired Scotch Pot Malt and BrownMalt – most commonly used in dark porter beers – and ‘pitched’ two yeaststhat are typically used when making red wine, Pepe Nero and Toro Nero.
Pitch is the final release of their flagship collection that aims to debunk the age-old notion that 80% of the flavour comes from the cask.
