Daftmill Summer Batch Release 2012

46% abv

Vol- 70cl

The 2012 Summer Batch continues Daftmill’s uncompromising grain-to-glass philosophy. Grown exclusively on the Cuthbert family farm in Fife, the Concerto barley for this release was harvested from the South Fields on 2nd–3rd September 2011, then dried and stored on-site before being malted in Alloa during spring 2012. Distillation took place in July and August, with the new make spirit filled into twenty-three first-fill ex-bourbon barrels and left to mature in the upper levels of Daftmill’s traditional dunnage warehouse. Bottled in June 2025, this limited release of just 5,250 bottles remains true to Daftmill’s ethos: estate-grown barley, natural colour, and no chill filtration—delivering a whisky of pure provenance and understated elegance.
Tasting Note: Waves of sticky dark fruits, plum wine, and a subtle rancio character, all underpinned by gentle earthy notes and a hint of cocoa that unfolds with a splash of water. The palate is luxuriously thick and unctuous, delivering layers of hedgerow berries, crushed hazelnut, camphor, and dark chocolate, evolving into deeper notes of tobacco and herbal complexity. The finish is long and gracefully evolving, with peppery spice, treacle sweetness, and the comforting warmth of fresh-baked bread, as lingering oak and herbal tones leave a lasting impression.

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
